Catfish with Cornmeal Crust and Honey-Mustard Sauce

Ingredients (view qty in metric system instead)
Catfish: 1 cup yellow cornmeal 1/4 tsp. salt 1/4 tsp. pepper two catfish fillets, about 6 ounces each 2 tbsp. vegetable oil
Sauce: 1/2 tbsp. vegetable oil 2 tbsp. fresh lemon juice 1 1/2 tsp. honey 1 1/2 tsp. Dijon mustard
Directions
Stir together cornmeal, salt and pepper in a large bowl. Rinse catfish fillets and dredge in cornmeal until well coated. Heat oil in a large skillet over medium-high heat. Add catfish and cook until browned and cooked through, about 6 minutes. Drain fillets on paper towels.
For Sauce: Heat oil in skillet used to fry fish. Add lemon juice, honey and mustard and cook, whisking, 30 seconds.
Serve catfish topped with sauce.
Serves 2.
