Dill Mayonnaise: 1 1/2 cups prepared mayonnaise 2/3 cup sweet pickle relish 2/3 cup minced sweet onion 1/3 cup fresh lemon juice 3 tbsp. sugar 1 tbsp. dried dill, crumbled 1 tbsp. minced fresh garlic 1 tbsp. prepared horseradish, drained
Catfish BLT: six 6 ounce catfish fillets 1 cup buttermilk 1/4 cup Cajun seafood seasoning 12 slices hickory smoked bacon 6 buns, split and toasted dill mayonnaise 3 cups shredded lettuce 12 tomato slices
Directions
For Dill Mayonnaise: Combine mayonnaise, relish, sweet onion, lemon juice, sugar, dill, garlic and horseradish in a large bowl. Stir until well combined. Cover and refrigerate at least 2 hours before serving. Makes about 3 cups.
For Catfish BLT: Place catfish fillets in a large baking pan. Pour buttermilk over. Cover and refrigerate 30 minutes. Prepare grill. Cook bacon strips in a large skillet until crisp. Drain bacon on paper towels. Remove catfish from buttermilk. Season both sides of fillets with Cajun seasoning. Grill catfish fillets about 4 minutes per side until cooked through. Spread 2 tbsp. prepared dill mayonnaise on cut sides of each bun. On bottom bun halves, layer 1 catfish fillet, 1/2 cup lettuce, 2 tomato slices and 2 strips bacon. Place top bun over and serve.
Makes 6 sandwiches.
