Cashew Blondie Brownies with White Chocolate Frosting

Ingredients (view qty in metric system instead)
Brownies: 1 cup chopped salted cashews, divided 1 cup brown sugar 1/3 cup vegetable oil 1 tsp. vanilla extract 2 large eggs 1 1/4 cups all purpose flour 1 tsp. baking powder
Frosting: 3 ounces chopped white chocolate 2 tbsp. butter, softened 2 tbsp. milk 1 cup powdered sugar
Directions
For Brownies: Preheat oven to 350 degrees. Grease an 8 or 9 inch square baking pan. Combine 1/2 cup cashews, brown sugar, oil, vanilla and eggs in a large bowl and beat to blend. Add flour, baking powder and remaining 1/2 cup cashews and mix well. Spread batter in the prepared pan. Bake 20 to 30 minutes until a toothpick comes out clean. Transfer pan to a rack and cool brownies completely.
For Frosting: Place white chocolate in a small saucepan and melt over low heat, stirring constantly. Remove pan from the heat and beat in butter, milk and powdered sugar until smooth. Spread frosting evenly over cooled brownies. Cut into bars.
Makes about 2 dozen brownies.
