Ingredients (view qty in metric system instead)
1 tsp. olive oil 1 cup peeled, sliced baby carrots 1/2 cup uncooked long grain rice 1 cup chicken broth 1/4 cup snipped chives 1/2 tsp. salt 1/4 tsp. pepper
Directions
Combine oil and carrots in a medium skillet over medium heat. Cook about 5 minutes, stirring frequently. Add rice and stir 1 minute. Add broth and bring to a boil. Reduce heat, cover and simmer rice about 15 minutes until liquid is absorbed and rice is tender. Stir in chives, salt and pepper. Serve hot.
Serves 2.
