Ingredients (view qty in metric system instead)
10 ounces sliced peeled, sliced carrots 3/4 cup solid shortening 3/4 cup sugar 1 large egg, beaten to blend 1 tsp. vanilla extract 2 cups all purpose flour 1 tsp. baking powder 1/2 tsp. salt 2/3 cup chopped walnuts 1 cup powdered sugar 2 tbsp. orange juice 1/4 tsp. grated orange peel
Directions
Combine carrots with water to cover in a saucepan. Boil until tender. Drain and cool. Puree in a food processor until cool. Preheat oven to 350 degrees. Beat together shortening with sugar. Mix in egg and sugar. Sift together flour and baking powder. Stir in salt. Mix in dry ingredients alternately with carrot puree. Mix in walnuts. Drop by rounded tablespoonfuls onto greased cookie sheets. Bake about 20 minutes until light brown and springy. Stir together powdered sugar, orange juice and peel and spread over warm cookies. Store in an airtight container.
Makes about 25 to 30 cookies.
