Ingredients   (view qty in metric system instead)
3 tbsp. lemon juice
2 tbsp. sugar
1/2 tsp. salt
1/4 tsp. ground cumin
1/8 tsp. cayenne pepper
1 pound carrots, peeled and cut into julienne
1/2 cup thin sliced soft dried figs

Directions
Whisk together lemon juice, sugar, salt, cumin and cayenne in a large bowl until sugar and salt dissolve. Add julienned carrots and figs. Toss well to coat. Let stand 30 minutes at room temperature, tossing occasionally, until carrots are wilted.

Serves 2 to 4.
