Ingredients (view qty in metric system instead)
2 tbsp. olive oil 1 tbsp. lemon juice 1 tsp. dried mint leaves 1/2 tsp. minced fresh garlic 1/2 tsp. salt 1/4 tsp. pepper 3 medium carrots, peeled and thinly sliced on the diagonal 4 cups cauliflower florets, thinly sliced lengthwise 2 green onions, chopped
Directions
Whisk together olive oil, lemon juice, mint, garlic, salt and pepper in a large bowl. Bring a large pan of water to a simmer. Place a steamer rack over the simmering water. Place carrot slices on the steamer rack. Cover and steam carrots about 4 minutes until tender. Transfer the steamed carrots to the bowl with the oil mixture. Place cauliflower slices on the steamer rack. Cover and steam cauliflower about 3 minutes until tender. Add cauliflower to the carrots. Toss together salad and let cool. Stir in green onions. Cover and refrigerate until ready to serve.
Serves 4.
