Ingredients (view qty in metric system instead)
1 tsp. whole allspice berries 1 tsp. whole black peppercorns 1/2 cinnamon stick 1/2 tsp. grated nutmeg 1/2 cup finely chopped green onions 3 tbsp. soy sauce 2 tbsp. chopped fresh ginger 1 scotch bonnet chile, stemmed, seeded and minced 2 tbsp. chopped garlic 1 tsp. dried thyme 2 tsp. sugar 1 tsp. kosher salt four double-cut pork rib chops 2 tsp. vegetable oil
Directions
Combine allspice, peppercorns, cinnamon and nutmeg in a spice or coffee grinder. Grind to a powder. Combine green onions, soy sauce, ginger, chile, garlic, thyme, sugar and salt in a food processor. Blend to a coarse paste. Add spice mixture and pulse to blend. Place pork chops in a shallow baking dish. Pour marinade over and turn chops to coat. Cover and let chops stand 90 to 120 minutes at room temperature. Preheat oven to 500 degrees. Lightly coat a baking pan with nonstick spray. Remove chops from marinade and place on prepared pan. Bake about 20 minutes until cooked through. Let stand 10 minutes before serving.
Serves 4.
