Ingredients (view qty in metric system instead)
1 can pineapple undrained 2 tablespoons packe brown sugar 2 teaspoons cumin 1 teaspoon cinnamon 1/2 teaspoon thyme leaves 1/8 teaspoon ground red pepper 3 cloves garlic 3 to 4 pound pork roast 1 onion 1/2 teaspoon salt 1/2 teaspoon black pepper 1 to 2 onion
Directions
Drain pineapple reserving 1/2 cup juice. Combine reserved juice, brown sugar, cumin, cinnamon, thyme and red pepper in a bowl. Add garlic. Place roast and juice together and marinade 4 hours or over night. Preheat oven to 350 degrees. Cut each onion into wedges. Remove roast from marinade and place in roasting pan. Place onion and pineapple around roast. Sprinkle with salt and black pepper. Cover, bake 1 hour. Remove cover and continue baking until meat thermometer registers done. Remove from oven and let stand 10 minutes. Potatoes may be added in roasting pan if desired.
