Ingredients (view qty in metric system instead)
1 cup Ritz cracker crumbs 1/2 cup chopped walnuts 8 tbsp. melted butter 1/4 cup dark corn syrup 1/4 tsp. salt 6 boneless chicken breast halves with skin 8 ounce can crushed pineapple, drained, juices reserved 1/2 cup frozen orange juice concentrate, thawed 3 tbsp. bourbon orange wedges banana slices
Directions
Preheat oven to 350 degrees. Lightly butter a 13x9 inch baking pan. Stir together cracker crumbs, walnuts, butter, corn syrup and salt in a small bowl. Loosen skin on chicken breasts. Divide walnut mixture between chicken and stuff under skin. Seal skin with toothpicks. Place 2 tbsp. butter in a large skillet over high heat. Add stuffed chicken and brown, about 3 minutes per side. Stir together pineapple, 2 tbsp. reserved pineapple juice, orange juice concentrate, bourbon and remaining 2 tbsp. butter. Spoon mixture over chicken. Bake chicken about 35 minutes until cooked through. Transfer chicken to plates, spoon pan juices over and garnish with orange wedges and banana slices.
Serves 6.
