Ingredients (view qty in metric system instead)
1 cup cracker crumbs 1/2 cup chopped walnuts 1/2 cup melted butter, divided 1/4 cup dark corn syrup 1/4 tsp. salt 6 boneless skinless chicken breast halves 8 ounce can crushed pineapple, drained, 2 tbsp. juice reserved 1/2 cup frozen orange juice concentrate, thawed 3 tbsp. bourbon
Directions
Preheat oven to 350 degrees. Lightly butter a large baking pan. Stir together cracker crumbs, walnuts, 1/4 cup butter, corn syrup and salt in a small bowl. Cut a pocket horizontally in the side of each chicken breast. Fill each breast with 1/4 cup cracker mixture. Seal pocket with a toothpick. Heat 2 tbsp. butter in a large skillet. Add chicken and brown about 3 minutes per side. Transfer to prepared pan. Stir together pineapple with reserved 2 tbsp. juice, orange juice, bourbon and remaining 2 tbsp. butter in a small bowl. Spoon over chicken. Bake until chicken is cooked through, about 35 minutes. Transfer chicken to plates and spoon pan juices over. Serve immediately.
