Ingredients (view qty in metric system instead)
2 slices bacon 1 large egg 1/4 cup grated Parmesan cheese 1 tbsp. toasted pine nuts, finely chopped 1 tbsp. salt 1 1/4 pounds trimmed fresh green beans 1/4 tsp. pepper
Directions
Heat a large saucepan of lightly salted water to a boil. Meanwhile, fry bacon in a medium skillet until crisp. Drain bacon on paper towels and crumble. Whisk together egg and Parmesan in a large bowl. Add beans to boiling water. Boil about 5 minutes until beans are very tender, stirring occasionally. Drain beans well and add to egg mixture, tossing to coat. Add bacon, pine nuts and pepper and toss to blend. Serve immediately.
Serves 4 to 6.
