Ingredients (view qty in metric system instead)
2 cups peeled, diced apples 1 tbsp. lemon juice 6 tbsp. butter, divided 1/4 cup plus 2 tbsp. sugar 1/4 cup raisins 1 tbsp. apple juice 1/2 tsp. ground cinnamon 1/2 cup milk 1/2 cup all purpose flour 2 large eggs pinch ground nutmeg
Directions
Preheat oven to 425 degrees. Toss together apples and lemon juice in a small bowl. Melt 2 tbsp. butter in a 10 inch skillet over medium high heat. Add the apples and 2 tbsp. sugar. Cook about 5 to 7 minutes, stirring frequently, until apples are lightly caramelized. Stir in raisins, apple juice and cinnamon. Cook 1 minute. Whisk together milk, flour, remaining 1/4 cup sugar, eggs and nutmeg in a medium bowl. Stir in the apple raisin mixture. Melt remaining 4 tbsp. butter in an ovenproof 10 inch skillet over medium heat, tilting pan to coat sides. Pour the batter into the skillet and cook 1 minute. Transfer the skillet to the oven and bake pancake about 12 to 15 minutes until puffed and golden. Serve immediately.
Serves 4.
