Ingredients (view qty in metric system instead)
Filling: 1 1/4 cups water 1/4 cup sugar 3/4 cup brown sugar 3 tbsp. cornstarch 3 tbsp. butter, diced 3 cups sliced fresh rhubarb
Topping: 1 1/4 cups all purpose flour 1/4 cup plus 2 tsp. sugar 1 1/2 tsp. baking powder 1/4 cup butter, melted 1/3 cup milk 1/4 tsp. ground cinnamon
Directions
For Filling: Preheat oven to 350 degrees. Grease the inside of a 2 quart casserole dish. Combine the water, sugar, brown sugar, cornstarch, butter and rhubarb in a large saucepan. Cook about 10 to 15 minutes over medium heat until thickened and bubbly, stirring frequently. Pour the filling into the prepared dish.
For Topping: Stir together flour, 1/4 cup sugar, baking powder, melted butter and milk in a medium bowl. Drop rounded tablespoonfuls of the batter over the top of the filling. Stir together the cinnamon and remaining 2 tsp. sugar in a small bowl. Sprinkle the cinnamon sugar over the topping. Bake cobbler about 15 minutes until the topping is cooked through. Cool cobbler slightly before serving.
Serves 6 to 8.
