Ingredients (view qty in metric system instead)
1 cup sugar 1/4 cup water 1 cup heavy or whipping cream 3 cups milk 1/4 cup cornstarch 2 large eggs 1 1/2 tsp. vanilla extract
Directions
Combine sugar and water in a medium saucepan. Heat to a boil, stirring to dissolve sugar. Boil until sugar turns a deep amber color. Carefully stir in cream(mixture will bubble up). Stir in 2 1/2 cups milk and heat to a simmer. Whisk together remaining 1/2 cup milk and cornstarch in a small bowl until smooth. Whisk into caramel mixture . Simmer, whisking occasionally, 2 minutes. Whisk together eggs, vanilla and salt in a medium bowl. Slowly whisk in 1 cup of the caramel mixture. Whisk in remaining caramel. Set pudding over an ice bath. Cool pudding, whisking occasionally, until cold.
Serves 4.
