Ingredients   (view qty in metric system instead)
Crust:
2 cups graham cracker crumbs
1 tsp. finely grated orange peel
1 tsp. finely grated lemon peel
6 tbsp. melted butter

Filling:
40 ounces cream cheese, softened
1 1/3 cups sugar
3 tbsp. all purpose flour
5 large eggs
2 large egg yolks
1/4 cup heavy or whipping cream
2 tsp. fresh lemon juice
1 tsp. finely grated lemon peel
1 tsp. finely grated orange peel
1/2 tsp. vanilla extract

Topping:
1/2 cup apricot jam. melted and strained
2 pints fresh strawberries, stemmed and halved
16 ounce can mandarin orange slices
2 kiwis, peeled and sliced 1/4 inch thick

Directions
For Crust:
Preheat oven to 400 degrees. Stir together graham crumbs, orange and lemon peels and melted butter in a medium bowl. Press the crust mixture evenly into the bottom of a 10 inch springform pan. Bake crust 8 to 10 minutes until lightly browned. Transfer crust to a rack and cool.

For Filling:
Increase oven to 425 degrees. Beat together cream cheese, sugar and flour in a large bowl until smooth. Add eggs and yolks one at a time, beating after each addition. Stir in cream, lemon juice, both peels and vanilla. Wrap the outside of the springform pan tightly with foil. Pour the filling over the prepared crust. Place springform in a roasting pan. Add enough hot water to the roasting pan to come halfway up sides of springform pan. Bake 15 minutes. Reduce oven to 300 degrees. Continue baking cheesecake about 50 minutes until set. Transfer cheesecake to a rack and cool completely. Cover and refrigerate overnight.

For Topping:
Run a knife around the inside of the springform pan. Remove pan sides and transfer cheesecake to a serving plate. Brush half the melted jam over the top of the cheesecake. Arrange strawberry halves, mandarin orange segments and kiwi slices in a decorative pattern over top of cheesecake. Brush fruit with remaining jam.

Serves 10 to 12.
