Ingredients (view qty in metric system instead)
6 English muffins, split 12 slices cooked bacon 12 large eggs 3 medium avocados, peeled, pitted and thinly sliced 4 large egg yolks 1/2 cup melted butter 1 tbsp. plus 1 tsp. lemon juice
Directions
Toast English muffin halves. Cover each half with 1 slice of bacon. Poach eggs and place over bacon.
Whisk egg yolks in the top of a double boiler over simmering water until slightly thickened. Very slowly, whisk in melted butter. Add lemon juice and whisk until thickened. Remove sauce from over the water and spoon over poached eggs. Top each muffin half with 2 to 3 avocado slices and serve.
Serves 6.
