6 avocados, peeled, pitted and halved 3 tbsp. olive oil 3 tbsp. fresh lemon juice 1 tsp. salt 1 1/2 cups shredded Manchego cheese 1 1/2 cups shredded sharp Cheddar cheese 6 poblano chilies, roasted, peeled and cut into strips 6 tbsp. prepared salsa six 10 inch flour tortillas 6 tbsp. butter
Directions
Preheat barbecue grill. Slice each avocado half into 5 slices. Stir together olive oil and lemon juice in a small bowl. Brush each avocado slice with some of the lemon-oil mixture and sprinkle with salt. Grill avocado slices, turning once, until lightly browned. Combine Manchego and Cheddar cheeses in a medium bowl.
For each Quesadilla: Lay 1 tortilla flat on a cutting board. Put 1/4 cup of the cheese mixture on half of the tortilla. Lay about 8 poblano strips over cheese. Top with 5 slices grilled avocado. Drizzle 1 tbsp. salsa over. Top with 1/4 cup cheese mixture. Melt 1 tbsp. butter over medium heat in a medium skillet. Fold quesadilla over and add to skillet. Brown quesadilla on both sides. Cover skillet for 1 minute to finish melting cheese. Cut into 4 pieces and serve.
Makes 6 quesadillas.
