Ingredients (view qty in metric system instead)
Sauce: 1 head garlic, unpeeled, cloves separated 1 tbsp. olive oil 1 cup prepared mayonnaise 1/2 cup roasted red bell peppers, chopped 1 small dill pickle, chopped 1 1/2 tbsp. capers, chopped 1 tbsp. minced red onion 1 tbsp. minced fresh parsley 1 1/2 tsp. fresh lemon juice
Fish: 4 tbsp. Cajun seasoning 4 sea bass fillets, each about 8 ounces 4 tbsp. olive oil
Directions
For Sauce: Preheat oven to 350 degrees. Place garlic cloves in a baking pan. Drizzle oil over garlic and toss to coat. Bake about 20 minutes until garlic is soft. Cool garlic. Press garlic between your fingers and pop out cloves. Chop garlic and transfer to a small bowl. Add mayonnaise, roasted peppers, dill pickle, capers, onion, parsley and lemon juice. Stir well to combine. Cover and refrigerate until ready to use.
For Fish: Sprinkle Cajun seasoning over all sides of fish. Heat oil in a large cast iron skillet over high heat. Add fish and cook about 8 minutes until crisp and cooked through, turning occasionally. Serve with sauce.
Serves 4.
