Ingredients (view qty in metric system instead)
2 pork tenderloins, 1 pound each 2 tsp. vegetable oil 3 tbsp. paprika 2 tsp. dried oregano 2 tsp. dried thyme 1 1/2 tsp. garlic powder 1/2 tsp. pepper 1/2 tsp. salt 1/2 tsp. ground cumin 1/4 tsp. ground nutmeg 1/4 tsp. cayenne pepper
Directions
Place pork in a greased 13x9 inch baking pan. Rub each tenderloin with 1 tsp. oil. Stir together paprika, oregano, thyme, garlic powder, pepper, salt, cumin, nutmeg and cayenne in a small bowl. Rub spice mixture all over tenderloins. Cover and refrigerate overnight.
Preheat oven to 425 degrees. Roast pork 25 to 30 minutes until meat thermometer reads 160 degrees. Remove pork from oven and let stand 10 minutes. Slice pork thinly and serve.
Serves 4 to 6.
