Cajun New York Strips with Orange Bourbon Glaze

Ingredients (view qty in metric system instead)
Steaks: 1 tsp. Cajun seasoning 1 tsp. cayenne pepper 1/2 tsp. salt 1/4 tsp. pepper 3 tbsp. canola oil 2 New York strip steaks, about 12 to 14 ounces each
Glaze: 2 tbsp. minced shallot 2 tbsp. butter, divided 1/2 cup bourbon 1 orangr, peeled, seeded and segmented 1/4 cup brown sugar 1/4 tsp. salt 1/4 tsp. pepper 1 cup beef broth
Directions
For Steaks: Stir together Cajun seasoning, cayenne, salt and pepper in a small bowl. Rub the spice mixture all over the steaks. Heat oil in a large skillet over medium high heat. Add steaks to the skillet and sear 2 to 3 minutes on each side. Transfer steaks to a baking dish and refrigerate 1 hour. Prepare grill. Grill steaks to desired doneness. Drizzle glaze over steaks and serve.
For Glaze: Combine shallots and 1 tbsp. butter in a medium saucepan over medium high heat. Cook shallots until browned, stirring frequently. Add bourbon, orange segments, brown sugar, salt and pepper and bring to a simmer. Reduce heat to medium low and stir in broth. Simmer about 45 to 60 minutes until sauce consistency. Whisk in remaining 1 tbsp. butter.
Serves 2.
