Cajun Marinated Chicken with Grilled Vegetables

Ingredients (view qty in metric system instead)
1/4 cup chopped onion 1 medium clove garlic, peeled 1/4 cup vegetable oil 1 tbsp. lime juice 2 tsp. paprika 1 tsp. crumbled, dried oregano 1 tsp. crumbled, dried thyme 1/4 tsp. cayenne pepper 1/4 tsp. Cajun seasoning 1/4 tsp. salt 1/4 tsp. pepper 6 boneless skinless chicken breast halves, about 6 to 8 ounces each 1 large red onion, peeled and cut into large squares 12 medium sized fresh mushrooms 12 large cherry tomatoes
Directions
Combine 1/4 cup onion, garlic, oil, lime juice, paprika, oregano, thyme, cayenne, Cajun seasoning, salt and pepper in a food processor. Blend about 20 seconds until garlic is finely minced. Transfer mixture to a medium baking dish. Add chicken, turning to coat. Cover and refrigerate at least 4 hours, turning chicken occasionally.
Prepare grill. Thread red onion squares, mushrooms and cherry tomatoes alternately onto 6 skewers. Remove the chicken from the marinade, reserving marinade. Place chicken and vegetable skewers onto the grill. Cover and grill, basting and turning occasionally, about 10 to 12 minutes until chicken is cooked through. Divide chicken and vegetables between plates and serve.
Serves 6.
