6 center cut pork loin chops 1 cup lime juice 1/2 cup water 1 large tomato, chopped 1 small onion, peeled and chopped 2 tbsp. red wine vinegar 1 tbsp. chopped fresh parsley leaves 1/4 tsp. garlic salt 1/4 cup Cajun seasoning
Directions
Place the pork chops in a large glass dish. Pour the lime juice and water over the chops, turning to coat. Cover and refrigerate chops at least 2 hours. Stir together tomato, onion, wine vinegar, parsley and garlic salt in a medium bowl. Cover and refrigerate. Preheat a large cast iron skillet over medium high heat. Remove the pork chops from the marinade and coat both sides with the Cajun seasoning. Place the chops in the skillet and cook until blackened and cooked through, about 4 to 6 minutes per side. Divide the pork chops between plates and spoon the tomato mixture over. Serve chops immediately.
Serves 6.
