Ingredients (view qty in metric system instead)
2 tbsp. vegetable oil 1 large onion, peeled and chopped 3 medium cloves garlic, peeled and chopped 1 tsp. ground cumin 1 tbsp. chili powder 1/2 tsp. crumbled dried oregano three 15 ounce cans black beans 1/4 tsp. pepper salsa shredded Monterey Jack cheese diced fresh tomatoes
Directions
Heat oil in a large pot over medium heat. Add onion and cook 5 minutes, stirring frequently. Stir in garlic, cumin, chili powder and oregano. Place beans from 1 can in a food processor and puree. Add remaining 2 cans beans to soup pot along with puree. Reduce heat and simmer 15 minutes, stirring frequently. Stir in pepper. Ladle soup into bowls and garnish with salsa, cheese and tomatoes.
Serves 4 to 6.
