Ingredients (view qty in metric system instead)
1 cup butter, room temperature 3/4 cup sugar 3/4 cup brown sugar 2 large eggs 1 tsp. vanilla extract 1 1/4 cups all purpose flour 1 tsp. baking soda 1/4 tsp. salt 1/2 tsp. ground cinnamon 3 cups old fashioned or quick cooking oats 12 ounce package butterscotch baking chips
Directions
Preheat oven to 375 degrees. Cream together butter, sugar, brown sugar, eggs and vanilla in a large bowl. Stir together flour, baking soda, salt and cinnamon in a small bowl. Add the flour to the batter and mix until well blended. Stir in oats and butterscotch chips. Drop dough by tablespoonfuls onto an ungreased sheet pan, spacing about 1 1/2 inches apart. Bake cookies about 7 to 9 minutes until set but still soft. Let cookies cool 2 minutes on the pan. Transfer cookies to a rack and cool completely.
Makes about 4 dozen cookies.
