Ingredients (view qty in metric system instead)
2 tbsp. butter, diced 1 cup white cornmeal 1 1/2 tsp. baking powder 1 tsp. sugar 1/2 tsp. baking soda 1 1/4 tsp. kosher salt 2 cups buttermilk 1 cup milk 3 large eggs, beaten to blend
Directions
Preheat oven to 375 degrees. Butter a 2 quart casserole dish. Combine cornmeal, baking powder, sugar, baking soda and salt in a large bowl. Combine buttermilk and milk in a medium saucepan and heat until steaming but not simmering. Stir hot milk into the cornmeal mixture. Stir in butter until melted. Stir in eggs. Pour the batter into the prepared dish and bake about 45 minutes until set and golden. Serve immediately.
Serves 4 to 6.
