Ingredients (view qty in metric system instead)
2 cups white or yellow cornmeal 3 1/2 tsp. baking powder 1/2 tsp. baking soda pinch salt 1 1/2 cups sour cream 2 large eggs, beaten to blend 2 tbsp. vegetable oil 2/3 cup buttermilk
Directions
Preheat oven to 425 degrees. Coat the inside of a 9x12 inch baking pan with cooking spray. Line the bottom of the pan with wax paper. Stir together cornmeal, baking powder, baking soda and salt in a large bowl. In a medium bowl, beat together the sour cream, eggs, oil and buttermilk. Stir in the cornmeal mixture just until combined. Pour batter into the prepared pan. Bake 30 to 35 minutes until cornbread is lightly browned. Cool in pan 5 minutes. Invert pan to remove corn bread. Discard wax paper and cut corn bread into 12 squares. Serve warm.
Makes 12 pieces.
