Ingredients (view qty in metric system instead)
2 cups yellow cornmeal 1 cup sifted all purpose flour 6 tbsp. sugar 1 tbsp. baking powder 3/4 tsp. salt 1/2 tsp. baking soda 1/2 cup cold butter, diced 1 1/2 cups buttermilk 3 large eggs, beaten to blend
Directions
Preheat oven to 400 degrees. Butter the bottom of a 9 inch square baking pan. Stir together cornmeal, flour, sugar, baking powder, salt and baking soda in a large bowl. Cut in butter until clumps form. Add buttermilk and eggs and stir until well combined. Spread the cornbread batter evenly in the prepared pan. Bake cornbread about 30 minutes until lightly browned on top and a toothpick comes out clean. Transfer the pan to a rack and cool cornbread to room temperature. Cut cornbread into squares and serve.
Serves 12.
