Ingredients (view qty in metric system instead)
2 tsp. dried basil 1/2 tsp. dried thyme 1/2 tsp. dried oregano 1 large clove garlic, minced 1 tsp. salt 1 tsp. pepper 14 to 16 pound turkey 6 tbsp. butter, room temperature 1 1/2 cups dry white wine 1 1/2 cups chicken broth
Directions
Preheat oven to 325 degrees. Mix together basil, thyme, oregano, garlic, salt and pepper in a small bowl. Rub herb mixture into turkey skin. Tie turkey legs together. Place breast -side down on a buttered rack in a large roasting pan. Rub butter over turkey and roast 20 minutes. Pour 1/2 cup wine over turkey. Roast 2 1/2 hours, basting with pan juices and remaining wine every 30 minutes. Turn turkey breast-side up and roast about 45 minutes until skin is browned and thermometer inserted in thick part of thigh reads 170 degrees.
Serves about 12 to 14.
