Ingredients (view qty in metric system instead)
2 tbsp. olive oil 2 medium shallots, minced 1 pound brussels sprouts 1/2 tsp. salt, divided 3/4 tsp. pepper, divided 1 cup chicken broth 1/3 cup heavy or whipping cream 2 tbsp. chopped fresh chives 1/2 cup crumbled blue cheese
Directions
Heat olive oil in a large skillet. Add shallots and cook 1 minute. Add brussels sprouts, 1/4 tsp. salt and 1/4 tsp. pepper and cook 1 minute. Add broth and bring to a boil. Reduce heat, cover and simmer about 5 minutes until sprouts are almost tender. Uncover and boil until liquid is almost evaporated. Add cream and boil, stirring frequently, 5 minutes. Stir in chives and remaining 1/4 tsp. salt and 1/2 tsp. pepper. Transfer sprouts to a large bowl, sprinkle blue cheese over top and serve.
Serves 4 to 6.
