Ingredients (view qty in metric system instead)
1 cup plus 2 tbsp. sugar 1/2 cup butter 1/4 cup water 10 ounces chopped bittersweet or semisweet chocolate 3 large eggs 1 tsp. vanilla extract 1 cup plus 2 tbsp. flour 1 1/2 tsp. baking soda 1 tsp. salt 3/4 cup chopped pecans or walnuts 6 to 8 cups vanilla ice cream, slightly softened
Directions
Preheat oven to 325 degrees. Line a sheet pan with parchment paper. Combine sugar, butter and water in a large saucepan. Cook, stirring, over medium heat until sugar dissolves. Reduce heat to low and add chocolate. Stir until smooth. Transfer mixture to a large bowl. Whisk in eggs, vanilla, flour, baking soda, salt and nuts. Spread batter on prepared pan and bake 20 minutes until a toothpick comes out clean. Cool brownies completely in pan on a rack. Freeze cooled brownies until firm. Remove brownies from pan and invert. Peel off parchment paper and cut brownies in half crosswise. Cover 1 brownie half evenly with ice cream. Top with remaining brownie half, pressing to adhere. Freeze brownies until ice cream is firm. Let brownies soften slightly at room temperature. Cut into 2x4 inch rectangles and freeze until firm.
Makes about 10 sandwiches.
