Ingredients (view qty in metric system instead)
1 large onion, peeled and finely chopped 1 cup finely chopped celery 1/2 cup minced fresh parsley 3 cloves garlic, peeled and minced 3 tbsp. vegetable oil plus additional for frying 4 cups cooked brown rice 2 cups coarsely grated carrots 2 large eggs, beaten to blend 1/2 cup whole wheat flour 1/2 tsp. salt 1/2 tsp. pepper
Directions
Heat 3 tbsp. oil in a large skillet. Add onion, celery, parsley and garlic. Cook 10 minutes, stirring frequently. Transfer vegetables to a large bowl. Mix in rice, carrots, eggs, flour, salt and pepper until well combined. Form mixture into desired size patties, adding more flour if mixture is too moist. Heat oil in a large skillet over medium-high heat. Add patties and fry on both sides until golden brown. Drain on paper towels and serve.
Serves 4 to 6.
