Ingredients (view qty in metric system instead)
4 cloves fresh garlic, peeled and chopped, divided 6 ounces grated Parmesan cheese 1 cup dry bread crumbs 6 tbsp. olive oil, divided 1 tsp. dried basil 1 tsp. dried oregano 1 tbsp. chopped fresh parsley leaves 8 large scallops 1 tbsp. Dijon mustard 1/2 tsp. salt 1/2 tsp. pepper
Directions
Preheat broiler. Stir together half of the garlic, Parmesan, bread crumbs3 tbsp. olive oil, basil, oregano and parsley in a small bowl. Heat a large broiler proof skillet over high heat. Add scallops and remaining oil and garlic to skillet and toss to coat. Sear scallops on both sides. Remove pan from the heat. Brush Dijon over the top of the scallops. Press bread crumb mixture onto the top of the scallops. Transfer skillet to the broiler. Broil scallops until cooked through and topping is crisp, about 3 minutes. Serve immediately.
Serves 2 to 4.
