6 green onions, finely chopped 2 tbsp. spicy prepared salsa 2 tbsp. vegetable oil 2 tbsp. soy sauce 1 1/2 tbsp. finely grated lemon peel 2 tsp. minced fresh garlic 4 shoulder lamb chops, about 6 to 8 ounces each
Directions
Combine green onions, salsa, oil, soy sauce, lemon peel and garlic in a shallow baking dish. Add lamb chops and turn to coat. Cover and refrigerate lamb chops 2 to 3 hours, turning occasionally.
Preheat broiler. Line a sheet pan with foil. Remove the lamb chops from the marinade and arrange on the prepared pan. Broil lamb chops 4 to 5 inches from the heat for about 4 minutes per side for medium rare. Serve lamb immediately.
Serves 4.
