Ingredients (view qty in metric system instead)
Salmon: 6 salmon fillets, about 4 to 6 ounces each 1 tsp. lime juice 1 tbsp. lemon juice 2 tsp. minced shallot or red onion 2 tsp. minced fresh garlic 1/2 tsp. cracked black peppercorns
Salsa: 1 tbsp. butter 1 tbsp. minced shallot or red onion 1 tsp. minced fresh jalapeno pepper 1 tsp. peeled, minced fresh ginger 1 1/4 cups orange juice 1 tbsp. diced canned pineapple 1 tsp. chopped fresh mint 1/2 tbsp. chopped fresh basil 1/4 tsp. curry powder
Directions
For Salmon: Place the salmon fillets in a broiler proof dish. Sprinkle salmon with lime juice, lemon juice, shallot or red onion, garlic and pepper. Let salmon stand 15 to 20 minutes at room temperature.
For Salsa: Melt the butter in a medium saucepan over medium heat. Add shallots, jalapeno and ginger. Cook 2 minutes, stirring frequently. Add the orange juice and heat to a boil. Boil about 5 minutes until reduced slightly. Stir in pineapple, mint, basil and curry powder. Remove the pan from the heat.
Preheat broiler. Broil marinated salmon about 4 to 5 minutes until cooked through. Divide the salmon between plates and spoon warm salsa over. Serve immediately.
Serves 6.
