Ingredients (view qty in metric system instead)
1/4 cup orange juice 2 tbsp. vegetable oil 2 tbsp. soy sauce 1 tbsp. lemon juice 1 tsp. minced, fresh garlic 1/8 tsp. pepper 4 catfish fillets, about 8 ounces each
Directions
Stir together orange juice, oil, soy sauce, lemon juice, garlic and pepper in a shallow baking dish. Add catfish fillets and turn to coat. Cover and refrigerate 1 1/2 hours, turning fillets every 30 minutes.
Preheat broiler. Line a broiler pan with foil. Lightly coat foil with cooking spray. Remove catfish fillets from the marinade and place in a single layer on the prepared pan. Broil catfish 4 inches from the heat for about 10 minutes, turning once halfway through cooking, until fish is just cooked through. Serve immediately.
Serves 4.
