Ingredients (view qty in metric system instead)
Sauce: 1/4 cup butter 4 tbsp. all purpose flour 3 cups water 1/4 cup chili powder 2 tbsp. paprika 1/2 tsp. minced garlic 1/4 tsp. salt 1/4 tsp. pepper
Pork: 8 pork chops, about 8 ounces each 6 ounces shredded Monterey Jack cheese 6 ounces grated sharp Cheddar cheese
Directions
For Sauce: Melt butter in a medium saucepan over medium high heat. Whisk in flour. Cook, whisking, about 3 minutes until flour is golden. Whisk in water and bring to a simmer. Simmer, whisking frequently, until thickened. Add chili powder, paprika, garlic, salt and pepper. Simmer 15 minutes, stirring occasionally.
For Pork: Preheat broiler. Place pork chops on a broiler pan and season with salt and pepper. Broil pork about 4 to 6 minutes per side until cooked through. Ladle sauce over pork and sprinkle with Monterey Jack and Cheddar. Broil 1 to 2 minutes until cheese is melted. Divide chops between plates and serve immediately.
Serves 8.
