Ingredients (view qty in metric system instead)
2 medium tomatoes, seeded and cut into strips 1/4 cup oil packed sun dried tomatoes, cut into strips 1/2 cup peeled, thinly sliced red onion 1/4 cup canned diced green chilies 1 1/2 tsp. minced fresh garlic 1 tbsp. lemon juice 1/2 tsp. salt 1/2 tsp. pepper 2 boneless, skinless chicken breast halves, about 6 to 8 ounces each 1/4 cup olive oil 6 ounces uncooked fettuccine 1/2 cup heavy whipping cream 2 tbsp. brandy 1/2 tsp. ground cumin
Directions
Preheat oven to broil. Stir together tomatoes, sun dried tomatoes, red onion, chilies, garlic, lemon juice, salt and pepper in a medium bowl. Place chicken on a broiler proof pan. Broil chicken 4 inches from the heat for about 4 minutes per side until cooked through. Meanwhile, heat a large pan of lightly salted water to a boil. Add fettuccine and boil, stirring frequently, until just done. Drain well. Heat olive oil in a large skillet over medium high heat. Add the tomato mixture to the skillet and cook 2 minutes, stirring constantly. Stir in cream and brandy and boil until slightly thickened. Stir in the cooked fettuccine and cumin. Divide the fettuccine between 2 plates. Place chicken over pasta and serve immediately.
Serves 2.
