Ingredients (view qty in metric system instead)
1 1/2 tbsp. vegetable oil 1/2 cup minced onion 3 tbsp. maple syrup 1 1/2 tbsp. coarse grain Dijon mustard 4 boneless, skinless chicken breast halves, about 4 to 6 ounces each
Directions
Heat oil in a small saucepan over medium heat. Add onion and cook about 3 to 5 minutes until tender, stirring frequently. Add syrup and mustard. Cook about 2 minutes until mixture thickens and bubbles, stirring occasionally. Preheat broiler. Season chicken with salt and pepper and place in a broiler pan. Brush the chicken with some of the glaze and broil 5 minutes. Turn chicken over and brush with remaining glaze. Broil an additional 6 to 8 minutes until chicken is cooked through and golden brown. Serve chicken immediately.
Serves 4.
