Ingredients (view qty in metric system instead)
12 ounce can evaporated milk, divided 2 cups shredded Cheddar cheese, divided 3 cups plus 1 tsp. dry baking mix 3/4 cup water 1 large egg, beaten to blend 3 tbsp. yellow mustard 12 slices cooked bacon 6 thin slices ham, divided
Directions
Preheat oven to 250 degrees. Combine 3/4 cup evaporated milk, 1 1/2 cups Cheddar and 1 tsp. baking mix in a small saucepan. Cook over medium heat, stirring constantly, until cheese is melted and sauce is thickened and creamy. Remove pan from the heat and cover. Whisk together remaining 3/4 cup evaporated milk, 1/2 cup Cheddar, 3 cups baking mix, water, egg and mustard in a medium bowl until well blended. Preheat a Belgian waffle maker. Pour about 1 1/4 cups batter onto the waffle maker and cook until done and browned. Transfer waffles to the warm oven and repeat cooking with remaining batter. Spread 2 tbsp. cheese sauce over one side of six of the waffles. Top each waffle with two slices bacon and one slice ham. Top with remaining waffles to form sandwiches. Serve warm.
Makes 6 sandwiches.
