Ingredients (view qty in metric system instead)
Pancakes: 1 cup all purpose flour 1 tbsp. sugar 2 tsp. baking powder 1/4 tsp. salt 1 large egg, beaten to blend 1/4 cup milk 2 tbsp. vegetable oil
Topping: 8 ounce container vanilla or strawberry yogurt 2 large bananas, peeled and cut into chunks 1/2 cup canned crushed pineapple, drained 1 pint strawberries, stemmed and sliced 2 tbsp. granola
Directions
For Pancakes: Combine flour, salt, sugar and baking powder in a small bowl. Whisk together egg, milk and oil until combined. Gradually add the flour mixture and whisk until smooth. Preheat oven to 200 degrees. Lightly grease a large skillet and heat. Drop 1 1/2 tbsp. batter per pancake 2 inches apart into skillet and cook until bubbles break and edges are browned. Flip and cook until golden brown. Transfer to oven and keep warm while preparing remaining pancakes.
For Topping: Place 2 pancakes on each of 8 plates. Dollop the yogurt on top and sprinkle the bananas, pineapple and strawberries over. Sprinkle with granola and serve immediately.
Serves 8.
