Ingredients (view qty in metric system instead)
1 pound boneless skinless chicken breast halves, cut into 1/2 inch wide strips 1/4 tsp. salt 1/4 tsp. pepper 1/4 cup olive oil 4 cloves garlic, peeled and finely chopped 1 tsp. grated orange peel 1 cup water 1/2 cup orange juice 1 cup yellow rice mix from an 8 ounce box, with seasoning packet 1/2 cup pimiento-stuffed Spanish olives, halved 1 cup chopped fresh cilantro
Directions
Season chicken strips with salt and pepper. Heat oil in a large skillet over medium-high heat. Add chicken strips, garlic and orange peel. Cook about 3 minutes until chicken is lightly browned. Add water and orange juice and heat to a boil. Add rice, seasoning packet and olives and return to a boil. Reduce heat, cover and simmer about 20 minutes until liquid is absorbed and rice is tender. Remove from heat and let stand, covered, 10 minutes. Stir in cilantro and serve immediately.
Serves 4.
