Ingredients (view qty in metric system instead)
5 tbsp. olive oil 3 pounds small red potatoes sliced 1/4 inch thick 3 tbsp. chopped fresh thyme or 2 tsp. dry 4 tsp. minced garlic 1 tsp. salt 1 tsp. pepper 1 1/2 cups chicken broth
Directions
Heat oil in heavy large skillet. Add potatoes, thyme and garlic. Sprinkle with salt and pepper. Cook 2 minutes, stirring. Add broth and bring to boil. Cover and simmer until potatoes are tender, stirring occasionally, about 25 minutes.
Approx. 8 side portions.
