1/3 cup water 1/3 cup bourbon 1/3 cup golden raisins 1 tsp. vanilla extract 2 1/2 pounds granny smith apples, cored, peeled and cut into 1/2 inch chunks 1/3 cup sugar 2 cups fresh breadcrumbs 6 tbsp. melted butter 1/4 cup brown sugar 1/2 tsp. ground cinnamon
Directions
Combine water and bourbon in a medium saucepan and heat to a boil. Add raisins and vanilla. Remove pan from heat, cover and let stand 1 hour. Preheat oven to 375 degrees. Transfer raisin mixture to a large bowl. Add apples and 1/3 cup sugar and toss to coat. Stir together breadcrumbs, butter, brown sugar and cinnamon in a medium bowl. Spoon half of apple mixture into an 8x8 inch glass baking dish. Top with half of breadcrumb mixture. Spoon remaining apples over and sprinkle with remaining breadcrumb mixture. Bake until apples are tender and topping is crisp and browned, about 50 minutes. Transfer dish to rack and cool 15 minutes before serving. Serve with ice cream if desired.
