Ingredients (view qty in metric system instead)
2 cups all purpose flour 2 tbsp. sugar 2 tsp. baking powder 1/2 tsp. salt 1 cup butter, room temperature 9 ounces cream cheese, room temperature 2 large eggs, beaten to blend 1/2 cup cherry or apricot preserves
Directions
Stir together flour, sugar, baking powder and salt in a medium bowl. Cream together butter and cream cheese in a large bowl. Stir in the flour mixture and eggs and blend until a stiff dough forms. Cover and refrigerate dough at least 2 hours until stiff enough to roll. Preheat oven to 375 degrees. Divide the dough into 4 pieces. Working in batches, roll dough out to 1/4 inch thick. Cut the dough into rounds with a 1 3/4 inch diameter round cookie cutter. Make a deep indentation in the center of each dough round with your fingertip. Fill the indentations with 1/4 tsp. cherry or apricot preserves. Place cookies 1 inch apart on an ungreased sheet pan. Bake cookies about 15 minutes until golden. Transfer cookies to a rack to cool completely. Store cookies in an airtight container at room temperature.
Makes about 6 dozen cookies.
