Ingredients (view qty in metric system instead)
1 package active dry yeast 1/4 cup + 2 1/4 cups warm water(110- to 115 degrees) 10 tbsp. olive oil, divided 6 cups all purpose flour 1 tsp. salt 2 tbsp. kosher salt 2 tsp. pepper 3 tsp. chopped fresh rosemary 3 tsp. chopped fresh thyme 2 tbsp. water
Directions
Mix together yeast and 1/4 cup water in a large bowl. Let stand 5 minutes until foamy. Stir in 6 tbsp. olive oil, flour, salt and 2 1/4 cups water. Cover and let rise until doubled, about 30 minutes. Grease 3 pie pans with olive oil. Divide dough among prepared pans. Dimple top of dough with your fingers. Stir together 4 tbsp. olive oil and 2 tbsp. water. Brush over top of dough. Sprinkle with kosher salt, pepper, rosemary and thyme. Let rise 50 to 60 minutes. Bake 25 minutes in a 350 degree oven.
Makes 3 crusts.
