Ingredients (view qty in metric system instead)
1 can cheddar cheese soup 1 can chicken broth 1 pound grated cheddar cheese 4 3/4 cup milk 2 tbsp. butter 2 tbsp. cornstarch 1/2 tsp. salt 1/2 tsp. pepper 1/2 tsp. onion powder 1/2 tsp. garlic salt 7 medium potatoes, boiled, cooled and diced into 1 inch cubes
Directions
Combine soup, 1/2 can broth and 3/4 cup milk in a large pot. Whisk until combined. Whisk in cheddar and remaining milk. Whisk together remaining broth and cornstarch in a small bowl until smooth. Add to soup. Stir in salt, pepper, onion powder and garlic salt. Bring soup to a boil. Reduce heat and simmer 15 to 20 minutes. Add potatoes and simmer an additional 15 minutes. Remove from heat and cool until lukewarm. Cover and refrigerate overnight. Reheat gently, stirring frequently, to serve.
Serves 6 to 8.
