Ingredients (view qty in metric system instead)
Crust: 1 1/2 cups old-fashioned oats 1 1/2 cups all purpose flour 1 cup brown sugar 1/2 tsp. baking soda 1 cup cold butter, diced
Filling: 12 ounces frozen, thawed blueberries 2/3 cup raspberry jam 5 tsp. all purpose flour 1 1/2 tsp. finely grated lemon peel
Directions
For Crust: Preheat oven to 375 degrees. Butter a 13x9 inch glass baking dish. Combine oats, flour, sugar and baking soda in a medium bowl. Cut in butter until a coarse meal forms. Press half the mixture into the bottom of the prepared pan. Bake crust about 15 minutes until light brown. Cool crust 5 minutes. Prepare filling.
For Filling: Toss together blueberries, jam and lemon peel in a medium bowl. Spread filling over cooled crust. Sprinkle remaining crumb mixture over top. Bake about 35 minutes until topping is golden. Transfer pan to a rack and cool completely. Cut into bars.
Makes about 24 bars.
