Ingredients (view qty in metric system instead)
Topping: 1 1/2 cups all purpose flour 3/4 cup brown sugar 1/2 cup cold butter, diced
Filling: 2 pounds nectarines, halved, pitted and cut into 4 wedges 4 cups fresh blueberries 1 cup red wine, divided 2 tbsp. cornstarch 1 tsp. vanilla extract 1/2 cup sugar
Directions
For Topping: Whisk together flour and brown sugar in a medium bowl. Rub in butter with your fingers until moist crumbs form.
For Filling: Preheat oven to 375 degrees. Butter a 13x9 inch baking dish. Combine nectarine wedges and blueberries in a large bowl. Stir together 1/4 cup wine, cornstarch and vanilla in a small bowl until cornstarch dissolves. Combine remaining 3/4 cup wine and sugar in a medium saucepan. Bring to a boil over medium high heat, stirring to dissolve sugar. Boil 3 minutes, stirring occasionally. Add cornstarch mixture and whisk about 30 seconds until thickened. Stir mixture into fruit. Transfer filling to the prepared dish and sprinkle topping over. Bake about 40 minutes until filling is bubbly and topping is crisp. Transfer dish to a rack and cool 15 minutes before serving.
Serves 6 to 8.
