Ingredients (view qty in metric system instead)
2 tbsp. butter, softened 6 large eggs 1 cup milk 2/3 cup all purpose flour 1/3 cup sugar 1/2 tsp. salt 1/2 tsp. vanilla extract 1 cup fresh blueberries 1/8 cup light corn syrup
Directions
Preheat oven to 425 degrees. Spread softened butter evenly over bottom and sides of a 9x13 inch baking dish. Combine eggs, milk, flour, sugar, salt and vanilla in a blender. Blend batter until smooth. Pour batter into the prepared dish and bake 20 to 25 minutes until pancake is golden brown and puffed(pancake will fall).Meanwhile, combine blueberries and corn syrup in a small skillet. Cook over medium heat about 2 minutes, just until blueberries start to pop. Remove berries from the heat and pour into the middle of the baked pancake. Cut pancake into 8 pieces and serve.
Serves 8.
